Roasted Green (String) beans with pepper & onions
1 lb. fresh green beans -- washed, ends trimmed off.
1 red Bell pepper -- cut into thin slices
1 green Bell pepper -- cut into thin slices
1 large onion -- cut into thin slices
1/3 cup of Balsamic Vinaigrette dressing
1/2 cup grated cheese of your choice
Method:
Combine and mix together the above, except the cheese, place in a roasting pan and roast in a hot oven of 400F for 30 minutes, stirring once at the 15 minutes interval.
Now sprinkle the cheese on top and bake for a further 2 or 3 minutes, or until cheese has melted.
Note:
If you have kids who are reluctant to eating vegetables, meatloaf is a good way to hide it. By using a food processor, you can do a wide range of vegetables and fold away in the meatloaf mix prior to baking.

Chefboog's:-GUACAMOLE (Dip)
Ingredients:
2 large ripe avocados
(halved, pitted, and peeled)
2 tbsp. Lemon (lime) juice
2 cloves garlic (minced)
1 large tomato (chopped)
1/4 cup sliced green onion (scallion)
Salt & pepper
Directions:
In a bowl, mash avocado with lemon juice and garlic.
Stir in tomato and green onions
Season to taste with salt and pepper
Note: This is a good way to use up avocado that has gone too ripe.
